OCR: WORT PRODUCTION One of the first words learned by any aspiring brewer is Wort (pronounced 'wert). Wort is a brewer's term for un fermented beer, produced by hailing di- lute malt sugar compounds with hops to add hop flavor and rid the future beer of unstable malt proteins. The first step in brewing beer is produc- ing wort. Wort is composed largely of barley malt sugar and flavor com- pounds, diluted with water and spiced with hops. To create wort the brewer first chooses malt, either using convenient malt cx- tract (concentrated wort) that has a- ready been extracted (mashed) from barley malt grain, or mashes pale mall grain by heating it in a thick porridge to 152' F. for an hour, to let the natural enzymes in the grain convert its starches to sugars.
